Pastificio Mancini grows its own durum wheat on family-owned fields in Le Marche, central Italy, milling and extruding it through circular bronze dies right where it's harvested. The pasta is slow-dried at low temperatures (below 44°C) for a rough, porous texture that captures sauce beautifully.
Square-cut spaghetti traditionally made using a "chitarra" (guitar) cutter, giving it a rougher bite that clings to sauce.
